Healthy Recipes

Breakfast Parfaits

  • Fat Free French Vanilla Yogurt
  • Fresh or Frozen whole strawberries or mixed berries
  • Banana
  • Granola

Slice the strawberries and banana into bit sized pieces.

Layer the parfait into a tall glass as follows:

  • 2 spoonfuls of yogurt
  • 2 spoonfuls of granola
  • Fruit
  • 2 spoonfuls for yogurt
  • 2 spoonfuls of granola
  • Fruit
  • 1 spoonful of yogurt

Nancy Miller (a grade 1/ 2 teacher at NES) offers a healthy breakfast club 2-3 times a year. The class is held once a week before school for a 6-8 week session. Applicants are chosen through a lottery system. 12 Students that have not previously participated are chosen for each session. The groups are separated into grades 1-2 and grades 3-5. Each week the students learn to read and prepare healthy breakfast foods.

Ms. Miller teaches students how to read recipes and how to safely prepare healthy foods. At the end of each class, they get to sample all of the yummy treats before heading to class for a day of learning.
